Madame Coco is sourced primarily from the Aude Valley, in the foothills of the Pyrenees. The high altitude and mountain proximity results in cool evening breezes and nights that allow the creation of elegant sparkling wines. The region has been producing sparkling wines since the sixteenth century, a heritage that pre-dates Champagne by over a century.

The Maison Veuve Ambal was founded in the heart of the Burgundy wine-growing regions in 1898 by the widow Marie Ambal. Veuve Ambal is now the producer of the leading brand of the famed Burgundian sparkling wine Crémant de Bourgogne. The Maison is known for the quality of its wines and the performance of its production facilities, making it Laurent Delaunay's partner of choice for Madame Coco.
